Gretta's Chocolate Muffins

Suitable for children with a Salicylate allergy.  Gluten and grain, dairy & egg free. Vegan.

 

Ingredients:

1. 1 cup water

2. 1 tsp vanilla

3. 1 Tbsp vinegar

4. 1/3 cup vegetable oil

5. 1 cup sugar

6. 1 tsp baking soda

7. 1/3 cup coconut (OPTIONAL )

8. 1 and 1/2 cups flour ( use quinoa & 1-2 tbsp potato starch or amaranth flour )

9. 3 Tbsp cocoa or carob powder

Method:

1. Pre-heat oven to 190C.

2. Mix first 5 ingredients in a bowl until blended through.

3. Sift the remaining ingredients and blend in bowl until just combined.

4. Bake for 15-20 minutes.
