Honey Nut Slice

This recipe is so easy to make - less than 5 mins + 25 mins cooking time.  It tastes like a grain free muesli bar and you could use it like one - great for breakfast on the run.  It keeps well.

 

Ingredients

 

120g (1 cup) chopped dates

90 g ( 1 cup, before being chopped) chopped walnuts

90 g (1 cup, before being chopped) chopped pecans (or nuts of choice)

90 g honey (I measure my honey straight into my mixing bowl so I am not fussing around with measuring cups and spoons as honey is so messy - but if you don't have an accurate set of scales - 90 g is 1/4 cup)

2 eggs

1/2 cup almond meal

1/2 cup desiccated coconut

 

Method

 

Heat oven to 180 deg.Cel.

 

Beat eggs and honey together

 

Add chopped dates, nuts, almond meal & coconut and mix well

 

Press into slice tin lined with baking paper (mine is about 27 cm x 13 cm) and press down well.

 

Bake for 25 min until brown on top. Cool in tin and cut into squares.
