Almond Coconut Pikelets

Contains no sugar, dairy (if you use soy or other non dairy milk) or gluten. Grain Free. Very high protein content means even though they are really light and fluffy, they will fill you up!!!

Ingredients:

 

¼-½ cup Almond Meal

¼ cup desiccated Coconut

¼ cup Potato Starch/Flour

1 tsp bicarbonate soda (baking soda)

½ tsp cream of tarter

pinch salt

1 egg

buttermilk OR soy milk (if using soy milk or other milk add 1 tsp of vinegar to the mixture at the end)

Pinch of salt (preferably celtic sea salt)

 

Method:

 

Add dry ingredients and mix well. (Can sift potato starch, cream or tarter and bicarb if you like – I am usually in too much of a hurry J so I just use a whisk to blend the dry ingredients together.)

 

Make a well and add egg, oil and enough buttermilk or milk to make mixture desired consistency. Mix well. Use less liquid for pikelets and more for crepes. Add splash of vinegar if not using buttermilk – it helps makes the crepes super-fluffy.

 

Pre-heat non stick pan (add a little oil or butter if desired).

 

Add tablespoons of mixture and cook until bubbles appear, flip and cook other side

 

Serve with condiments of choice (butter, cream or Nuttlex (dairy free margarine), with 100% Jam (no sugar added), Maple Syrup, Honey)
