50g buckwheat/quinoa flour (half and half is good)
Melt butter in saucepan and add flour, cook for about 2 mins.
Add about 2 cups milk, 1/2 cup grated mild colby cheese (failsafe), and finely diced celery, carrot, leek or other vegetables of choice and/or meat of choice eg: diced cooked chicken.
add small pinch of citric acid and salt to taste.
