Coconut Crepes filled with Strawberries and Cashew Cream

Cooking Time: 20 minutes including Preparation

Contains no sugar (except for fruit sugars), dairy (if you use soy or other non dairy milk) or gluten.  Grain Free.  Very high protein content.

Ingredients:

Cashew Cream

You need a coffee grinder for this recipe

Raw Cashews
Water as needed
Dash of Vanilla (read label – Vanilla essence has added sugar, so this ingredient is optional)
Maple Syrup OR stevia

Finely grind cashews in coffee grinder.  Add water and mix well using hand held mix-master or even just a spoon.   Add maple syrup or if sugar free add A REALLY SMALL AMOUNT – LESS THAN A PINCH of stevia.  If you are using stevia you will need to add more water.   Add a splash of vanilla.

Makes a dairy free alternative to cream – but as cashews it is a real protein hit so it super filling – use sparingly.!

Quantities are not so important in this recipe – just do everything to taste, and use as much cashews as you need – it will last forever in the fridge.   Also makes a fantastic spread.

Crepes

¼ cup Almond Meal
¼ cup desiccated or shredded Coconut 
¼ cup Potato Starch/Flour
2 eggs
splash of apple cider vinegar (or lemon juice)
Any kind of milk – cows, soy, rice, almond, oat, depending on allergy.  You can even use Water!  
1 punnet of strawberries or other berry of choice.

Combine and mix well dry ingredients.  Make a well and add eggs and enough liquid to make mixture “crepe consistency” – it should be quite runny, like pouring cream.  Mix well.

Pre-heat non stick pan (add a little oil or butter if desired).

Pour suitable quantity of mixture onto centre of pan and then tilt pan so that mixture runs to cover whole pan.  Cook until golden (edges of mixture will be slightly lifting from edge of pan, although don’t count on this a it may behave differently depending on what liquid you use) and then flip and cook other side.

Set aside crepes and cover with clean tea towel to keep warm.

Slice strawberries and if you like mix a little maple syrup through or just leave as is if strictly sugar free.  Another idea would be to make a fruit “compote” by gently cooking berries with a little water until soft, and add a tiny pinch of stevia to sweeten the liquid.

Assemble Crepes

Take a crepe and put strawberries, berries of choice or warm berry compote in one line down centre of crepe.  Drizzle cashew cream on top, then wrap.  Serve with extra berries on top and some toasted coconut.

  1. Is there something I can use instead of potato or corn starch to completely eliminate the white potato & corn out of my diet, corn is a grain. White potato not beneficial to diabetics, supposedly. Can Tapioca flour be used instead?

  2. Yes corn is a grain – I never use it. You can use pure almond meal if you like and omit the starch entirely (use 1/2 cup of almond meal and 1/4 cup unsweetened dried desicated coconut), it will just result in a heavier, denser crepe but still very very nice.
